Weekly Menu - Eating Stella Style Edition

This weeks menu is super easy, because I am super tired. I have read that it is normal to feel like you have been hit by a bus. I think the bus backed up and ran me over a few times.

I am adding carbs back into the menu for those who can tolerate them (so far, everyone but me. The jury is still out on Alex, though) and let me tell you ... that makes my life a lot easier.

When I went through to add comments about each dish I noticed a theme. Really, I think this Eating Stella Style book is my new favorite. I think I like it for the same reason that I love Lucy's SCD cookbook. They aren't pretentious. I am married to a Chef (who sold his soul to corporations...) and we had/have a lot of Chef friends.
We have seen enough pretense when it comes to food to last me a lifetime. Believe me. (Which might be the reason I am not a big fan of Eat Well Feel Well, but that is a whole other story.)

Everything served with a side of vegetable, side of fruit and a salad.

3/30 - Sunday
Beef Stir-Fry (Brown rice for everyone else, cauliflower rice for me) - I am going to use this really, really good peanut butter based Asian dipping sauce as the base. I will let you know how it works out.

3/31 - Monday
Beef stroganoff (w/o noodles for me, w/noodles for everyone else) - This recipe comes from Eating Stella Style and calls for ground beef. I will use SCD yogurt instead of the sour cream, but I just can bring myself to put the dill pickle relish in it.

4/1 - Tuesday
California Vegetable and White Bean Chili w/ cornbread (Mock cornbread for me) - Yum. Chili.

4/2 - Wednesday
Jamaican Jerk Chicken, brown rice (for everyone else), black beans (w/ tomatoes, onions, cilantro and other good stuff) - I am using the Jamaican Jerk recipe from Eating Stella Style's Jamaican BBQ Ribs recipe. I love me some Jerked meat, so this should be a winner.

4/3 - Thursday
Normal pancakes for everyone else, cinnamon toast flavored pancakes (opens a PDF) for me, hash browns for them, fruit for me - My pancakes will be a combination of two recipes - the one above and the cinnamon toast pancakes recipe from - Surprise! - Eating Stella Style

4/4 - Friday
Taco salad (w/o tortilla chips for me, w/ tortilla chips for everyone else) - This has become a favorite. I have to enjoy making my own chili powder and taco seasoning. Really, though ... once you eat the homemade stuff you wonder how you ever choked down the store bought stuff.

4/5 - Saturday
Grilled Marinated Flank Steak - Really sirloin, but the recipe is called Grilled Marinated Flank Steak, and comes from - you guessed it! - Eating Stella Style

We have both George Stella cookbooks-They are quite good and we love the beef stroganoff. I also love his muffins from Almond Flour.

I bought both of his books (used) and they should be here this week. I am so excited! If the first one is as good as Stella Style, I know I will love it!
